Anyway, does Scotrail count for Crewe? As in, is it a scheduled stop?

Indeed. I've done MAN-BHM on XC perhaps a dozen times or so, and twice I've been diverted via Crewe for one reason or another!
There are regular Manchester to Birmingham XC services that go via Crewe. On weekdays, these are the [05:11], [06:00] and [17:27].

York has EC, XC, NT, GC, EMT, TPE.
Unless you count WCRC, who run the Scarborough Spa Expres in summer, which is a WTT service, and you can turn up and go if there's room.
