Folks,
This may sound a tad weird however l was wondering about the following. On a Glasgow to London service, Virgin route,is it a chef who prepares the food on this journey or a crew member.

A chef does the breakfast and evening meals I think, the all-day / light bite / weekend offerings are prepared by First Class hosts IIRC.

I think even the evening meals are done by the First Class hosts. They tend to be "plate up" sort of meals - pies, stews, curries, chillies etc rather than meat that gets cooked and served there and then.

Only time I have seen a chef is on the early morning services, breakfast made to order
If you travel on the very early services sometimes the chef will actually take the orders in person
This is common on the 04:28 Glasgow to London, as he does not start until Carlisle, and whilst the train is still in the station walks down and takes the order

The evening meals are served very quickly after departure from Euston, look very much like reheated trays
I have never seen a chef on these services

Virgin don't have first class hosts just like east coast don't. They're Onboard CSAs and do a mix of FC, bar and trolley. Not to be pedantic of course<D

Are the roles on EC not substitutable? That seems an extremely shortsighted operating mechanism if so. What happens if the booked "trolley specialist" is ill?

I think Bridge189s point was that EC and Virgin are the same as in the onboard CSAs work all points on the train. At EC we usually just decide who's doing what on the day, nobody has a percific role.
