I was at Ely on Saturday.
There are three platforms, with a passenger train in each one, operated by three different TOCs. As my train left, I could see another train on the approach, operated by a fourth TOC.

Platform 1: Great Northern - Kings Cross to Kings Lynn
Platform 2: X-Country - Birmingham New Street to Stansted Airport
Platform 3: East Midlands - Norwich to Liverpool (or it might have been vice versa)
Approaching from Soham: Abelio Greater Anglia - Ipswich to Peterborough.

What other stations have more TOCs than platforms?

(Mods - move this to the "Infrastructure" page if you think necessary! Thanks.)

If the above is definitely what you're looking for, I would imagine there is a fairly extensive list if stations meeting this criteria, for instance:

Brough (2 platforms)
1. Northern
2. Transpennine Express
3. Virgin Trains (East Coast)
4. Hull Trains

If I've understood the question correctly?

Warrington central and several more on the CLC lines get TPE, northern and East Midlands with just 2 platforms

Several two-platform stations between Edinburgh and Aberdeen enjoy services from Scotrail, Virgin East Coast and Cross Country.

Bath Spa (2 platforms) has SWT, GWR and one train per day from XC.
Havant and Cosham (2 platforms) have SWT, Southern and GWR.

So we have Brough, Newquay and the group of Scottish stations with a 2:1 ration, and Dore & Totley with a 3:1 - any that beat that?

Sunderland would be another with 4 TOCs to 2 platforms - Northern, Grand Central, VTEC and the Tyne and Wear Metro!

Eastleigh has three platforms, served by SW, GW, SN and XC.

XC don't call at Eastleigh in passenger service though, only ever empties (picking up crew?)

I don't know if that counts or not, maybe OP should specify.

There used to be a XC train that either started or terminated at Eastleigh. Fairly sure that I remember seeing it at Leeds on the boards but could be mistaken.

Indeed I believe there used to be, but it doesn't appear that there is any more. Just some empties that call at Eastleigh now.

The London/South East map still shows Eastleigh as a calling point for them.

In the other direction, London Waterloo is served wholly by SWT and has 20 platforms. This'd be a ratio of 0.05:1.

Slightly different to the original question, but I know that at one time, Birmingham Snow Hill was the largest unstaffed station in the country and probably had the most platforms and fewest services: 12 platforms, but only a handful of shuttles to Langley Green and Wolverhampton Low Level.

Sunderland is interesting, it technically has two platform faces but is numbered as four platforms.

Depending on what you count as being different operators, Southern, Thameslink and Gatwick Express at Hassocks, Burgess Hill and Wivelsfield (2 each).
