It's an odd island of niceness (though I'm led to believe the hotel is rubbish) in an absolute and utter dive.

The hotel isn’t as nice inside as it looks from the outside, however to be fair it’s also no more expensive than a Travelodge. But for sure it needs quite a bit of work doing to it. I’ve stayed there a couple of times and would do so again, if for no other reason than sheer convenience. And of course it’s a former railway hotel.

The rest of the area is a dive though, the Wetherspoon in Stoke itself is one of the worst for sure.

Doncaster seems to have a charm about not, the booking hall is massive & quite airy.

York still has character plus a decent couple of pubs.

York, a favourite station of mine, seems rather large to me to fall into the OP's criteria.
I'd nominate both Settle and Appleby stations on the Settle and Carlisle line, both beautifully looked after and serving market towns, although they may be too small for the OP's criteria?

Ok here’s a thought , obviously it would be too expensive to waste money on based on current passenger numbers;
If Wakefield Kirkgate was restored and refurbished, it would come into this category - reminds me of a small Carlisle.
And other delapidated or rarely used stations that would be impressive?

Probably not many stations on the West Coast Main Line as the majority were rebuilt for electrification and are well not very nice looking.

Lincoln, would that count?

Beat me to it. Hasn't changed much in the past 15 or so years (when I was a kid!). New lifts for the footbridge and that's about it.

Whilst we're in Lincolnshire, Grimsby Town as well. Only thing new is the footbridge which provides the lifts too (not shown in the picture below though - it's at the other side).

I rate Kemble- well maintained original buildings and footbridge still in use, and still retains it branch line platform (for Cirencester).

Bradford on Avon is a pleasant medium sized station. It has original station buildings (that are in use) made from bathstone, and canopies, a footbridge and gardens.
It's a lovely station, but "medium sized"? Two short platforms and their moderate buildings only.
