Was looking to book the night train from Paris to Toulouse, but after the first week in October I can't find any in SNCF's booking engine or on DB planner. Same for the train to Rodez.
Are they being withdrawn?

I can see the Austerlitz - Rodez Intercites de nuit for dates in late October and mid November on en.oui.sncf
The Intercities-Nuits (or whatever it's called) service to Latour-de-Carol drops portions off at both Bordeaux and Toulouse-Montaubiau. I used this service last autumn, during which time the portion for Perpignan (which serves Rodez IIRC) wasn't operating due to engineering works.
It ran via Bordeaux and sat in the station for a period, I may be mistaken about portions being dropped/added as I was at the rear of the front portion in both directions. As you say, it doesn't appear that tickets to Bordeaux can be purchased so perhaps the stop was for operational reasons and/or was a diversion from the usual route? Or the route has been changed in the last 12 months.This is extremely interesting - but I can't find tickets/journeys that suggest that it goes to Bordeaux.
Have you allowed for public holidays affecting this (Friday 1st and Monday 11th?) just a thought, may not be relevant.It seems that the service runs on almost random days, which is why the European Rail Timetable says you should consult the journey planner.
When I looked in November, on one week it ran on Monday, Tuesday and Friday and not Saturday, but the following week didn't run on Friday but ran on Saturday, etc.

Generally they seem to be on Mondays, Tuesdays, Saturdays, Sundays in November. But then when I got to December 11-12, right up to the end of the current timetable period, suddenly they re-appeared running on Wednesday and Thursday!
