This link does contain 2021 data for Metrolink, last updated at the start of Feb.
Metrolink last updated their timetables on the 24th August 2020. The update in February 2021 was as a result of the Trafford Centre stop changing its name and the times are identical to the August 2020 timetable.

It'll be interesting to see if there are any changes forthcoming, though, as I believe some trams have become rather busy since the relaxing of restrictions and reopening of schools.

It appears that Metrolink are increasing services to a 'very close to' pre-pandemic level, on Monday.
Metrolink passengers are set for a service boost this summer, with the introduction of more frequent off-peak trams to cope with increasing demand.

From Monday 5 July, trams will run at least every 12 minutes across the network all day, representing a significant enhancement to the current 20-minute off-peak frequency.

In a further boost, and to increase capacity in the areas where it is most needed, a six-minute service will operate on the busiest lines at the busiest times – and later running trams will once again be in place across the weekend.

A six-minute service will operate from 7am-8pm Monday to Friday and 9am-6.30pm on Saturdays between the following destinations:
  • Altrincham and Manchester city centre
  • Bury and Manchester city centre
  • East Didsbury and Manchester city centre
  • Harbour City and Manchester city centre
  • Etihad Campus and Manchester city centre
  • Shaw and Crompton and Manchester city centre
