What tickets are unusable using the route printed on the ticket.
That is for a ticket A - B via C it is impossible (except by breaking NRG rules) to complete the whole journey.

To start off

Atherstone - Polesworth via Tamworth (no southbound trains stop at Polesworth

Atherstone to Polesworth is Northbound and there is a scheduled service at 7.21am. You'd need to pass through Polesworth to get to Tamworth (unless you're going via Birmingham!). In any case, heading the other way you would need to change at Atherstone (where you started from) and head north. So I can't imagine what Tamworth has to do with it!

In your Atherstone to Polesworth example, LM have made the "Route Tamworth" fare more expensive than the "Any Permitted" fare, so they clearly don't expect anyone to buy it. I assume they can't remove it completely because of silly "regulations."

Vauxhall to Runcorn route LM only (or however it appears) unless Vauxhall is now a London Terminal?

Well Vauxhall is a London Terminal, though I don't think it's applicable from Liverpool, and certainly not if you have to travel by LM only.

The route Tamworth fares are defined as part of a cluster, and the clusters can't be changed without DfT permission. Attached is a clearer view of what's going on than Avantix shows.
