Is it possible when buying an advance ticket to add extra connection time? I'm booking a first class ticket for my mum for a Northern commuter train into Manchester Picc then Avanti to London. I'd like to give her about 45-50 mins in Piccadilly so she's not stressing about time and has a chance...

It's easier just to buy the tickets in the Northern app using Google Pay, then the tickets appear in the app as etickets and you can also show the pdf from the confirmation email, assuming you can pick up your emails on your phone.

This may be too late but there's a free bus every 10 minutes during the day (every 15- 20 minutes in the evening) between Piccadilly and Victoria

So you forget to make a note of the actual time you arrived (maybe because you're focusing on getting to where you need to go) so check it on realtimetrains - and as a result get accused of fraud?
