I'm going to be travelling with a friend who has a student railcard. Were we to get a 2-together, would my friend get an extra discount (and if so, what would they pay?), or would we both just get 33%?

I noticed recently on the caledonian sleeper page it says up to three can be used in a "transaction" (https://www.sleeper.scot/tickets-timetables/railcards) - but my use is just for regular travel, not the sleeper.

Railcard discounted fares are (generally) 34% off the full fare.

You do not get a discount off a discount.

You might be booking for a group where 1 person has a 16-25 railcard, 1 has a Senior railcard, and 1 a Disabled railcard. So you are using three railcards for the overall transaction, but each ticket only has one discount applied.
