Thinking of nipping over for the weekend, 2 full days, 1 half day, whats the cheapest way to travel on the rails, maybe a run down to Cork one day and another day maybe to Rosslaire/Sligo, apart from the 3 day one country Interrails, are there any other tickets available, like days rovers or similar?

If you can decide now it's probably cheapest to just buy tickets online. Picking up is easy, just type in the 9 digit code at any machine.

Are you going to stay in Dublin? If you buy online 4-5 days in advance you can get a return to Rosslare for €10, return to Sligo for €36 and return to Cork for €40 - but each of these will take about 6-7 hours to get there and back

To be honest, I was planning to do something like this but I tried one trip in Ireland and it got boring very quickly, even though in Britain I can often spend 12+ hours a day on trains

In Dublin I used the 72-hour Leap Visitor Card and travelled on every route it was valid which took up a lot of the time (though I also rode the Enterprise to Belfast and back)

Thank you, yes I`m usually out for long days on my trips, up at 05.00 and not back until say 22.00 so those trips would be fine and not too expensive at those prices, my last Eire trips were back in the 90`s mainly on ITG railtours, Waterford, Cork, Westport, and an Inchicore open day on my own, I did have a day the other month on a run down from Belfast on the Enterprise to Dublin, as I was doing a 3 day trip in Northern Ireland, I was surprised how much Dublin had changed, especially with the trams now, so I`m due a revisit, thank you. Yes Id stay in Dublin, I can get in an hostel for £70 3 nights, and cheap flights for £50 return from Manchester.

the lower half of that page mentions a train to Knock. Any infos on that? I thought it is not rail connected.
If you have a ticket for the Knock event, you will be able to avail of a free bus shuttle between Claremorris Station and Knock Shrine before and after the Pope's mass.
