If I'm travelling from London to/from Norwich on an advance ticket that specifies 'London Terminals', and the train I'm booked on stops at Stratford, am I allowed to start/end my journey there instead of at Liverpool Street?

No. Advance tickets do not allow break of journey. In practice you might be able to get out at Stratford and lots of people will be along shortly to tell you that you can for various reasons. Stratford isn’t a London Terminal either.

Indeed, as the station Gateline is manned by London Underground, who I doubt care too much about TOC ticket validity and neither can they issue Penalty Fares or MG11's for Greater Anglia Journeys, The OP would be very unlucky to meet a Greater Anglia RPI at the station, but it could happen!

If you are changing to DLR / Underground / Overground and touching in with Oyster or contactless on a yellow reader then alightling at Stratford is unlikely to be an issue unless. Joining your train may be another matter. Not so much down to ticket validity but, if the train is heavily loaded, your "unoccupied" seat may have been taken by another traveller who may not feel inclined to move, especially if already informed by the conductor that it was unclaimed.
