I'm thinking of trying out the Pullman Dining service on a Swansea service soon--does anyone have any experience of (1) how it compares to the lunch/dinner services, and (2) if it's likely to be very busy (as I'll be travelling on a standard ticket and won't be able to make reservations)?

AFAIK, the menu is the same for lunch or dinner, only the breakfast menu differs.
You may well find space available for standard class passengers, but do not count on this.

To Swansea or from Swansea?

I use it about every other month, never had a problem eating in it as a standard passenger, even on a Monday on the 0559.

You get breakfast regardless of weather you're traveling to or from Swansea.

I've used it several times from Cardiff to London (and once from London to Cardiff), never had a problem getting a seat.

I usually head over when the train is pulling into Bristol and always manage to stay there until London. When I did it in reverse I stayed in the first class carriage for the entire trip back to Cardiff.

I'm travelling from Bridgend on Monday, is it busy on a Monday? Am I likely to be able to stay there until London? I've used the 0558 a few times but never spotted how busy Pullman is (usually empty when I get on at Bridgend)

It was probably near full when I used it about 3 Mondays ago - but no issue with me both joining at Bridgend (or just before the stop at Cardiff, they don't open at Swansea and I was worried there'd be a rush at Cardiff) and staying in till London.
