The DB Navigator says you can do it but I'm wondering if the train from Tunes / Faro scheduled to arrive 2126 tomorrow is going to connect with the Irun sleeper train that is due to stop at and depart Oriente at 2134.

It wouldn't be the end of the world if I missed it but wondering if anyone has a view on the percentage chances....

Additional complication is that I can cancel the sleeper train 5 minutes before departure...

It shows as ok on the CP website, so I would assume it is safe, though that has a general warning that connections are only guaranteed under normal operating conditions.

I caught the sleeper at Oriente about a month ago & although I got there at least an hour before (because I'm very cautious), I did notice a number of people get on it from another train that arrived on the other platform face with about 6 minutes to spare. I thought it was leaving it a bit tight, I guess it was an official connecting service.

Funnily enough I'm just back from Portugal where I made a connection from the 13.54 departure from Faro into the 17.39 departure to Porto at Lisboa Oriente. The service from Faro was about 12 mins late throughout (due to waiting connections from another service at Faro ironically)u p until the Lisbon area, but the connection was made as there seemed to be substantial recovery time in the schedule as it arrived at Lisboa Oriente just 2 mins late in the end and the connection to the Porto service was made.

Can you not depart earlier with your first train?

There are not many trains a day from Faro to Lisbon - the OP would arrive in Lisbon at 18.05 on the train before, 3.5 hours before the sleeper. That might not be convenient for them.

The number of real disruptions i had in more than 40 years of traintravel can be counted on 1 hand.

I did Faro-Oriente a couple of weeks ago and things were punctual or early.
The Faro line is nearly all single track in its southern half, so I imagine things can go awry at times.
However the thin service (5 a day) at least helps service recovery.
A very interesting and attractive ride.
You have to know what you are doing at Oriente for connections - it's a great big multilevel station with, I thought, limited passenger information.
