I'm visiting Bologna for a week in summer, I' using FIP coupons so Verona, Florence and Venice seem in range with Regionale trains. Are there any other local routes that are especially interesting/scenic, or wluld any of the routes I've mentioned be better with FR/FA trains

The new Bologna-Florence high-speed route is almost entirely in tunnel, so not very scenic (but it only takes 35 minutes).
Even the "old" (1934 Direttissima) line has a 19km tunnel and many smaller ones (takes an hour, not many trains, IC type).
The original (1864) winding route via Porretta and Pistoia looks very interesting though, at least for one way, with some spectacular engineering.
That's going to take 3-4 hours with 2 changes - also not many trains (Regional).

All other directions from Bologna are pretty much flat.

The route from Bologna to Florence via Faenza (?) is nice and on a small regional train too.

I rode from Bologna to Pistoia via Porretta Terme last summer. It's a beautiful journey, especially the bit down from Porretta towards Pistoia.
