Is there anywhere online that shows complete timetables for European routes, much like the way individual UK operators turn their printed booklets into PDFs? The search engines which just take a start and end station don't really give the level of detail I'd like in terms of working out good places to have breaks...

As mentioned above, The European Rail Timetable provides a summary of the most popular routes. For trip planning this is probably your best bet.

In Germany the Kursbuch allows you to download complete PDF timetables for any line. However, note that I wrote line, not route - in Germany at least the size, complexity and variety of routings in the network means producing complete end to end timetables for every long distance service wouldn't be practicable.

Some countries are easier than others ;)

Go to cfl.lu/fr

Click on "Trains Nationaux" and then on "Afficher" - et, voila - downloadable PDFs of the entire network of Chemins de Fer Luxembourgeois (CFL). Clicking on "Trains Internationaux" means you get downloadable PDFs of all international trains that stop in Luxembourg.

I speak reasonably good German, so the magazine is a real boon, and often has stories months before the British railway press. I found myself buying it when I visited Germany, so eventually I subscribed (which is not always easy - lots of German magazines won't send outside DE/AT/CH)

Finland here: https://www.vr.fi/cs/vr/fi/juna-aikataulut

The dropdown box under: Kaukoliikenteen yhteysväliaikataulut will give you specific lines, direct and connecting services on those lines
Asemakohtaiset aikataulut will give you timetables for specific stations

Then for the commuter traffic around Helsinki use the section: Lähiliikenteen aikataulut

Unfortunately the English language page doesn't have the correct dropdown boxes to select the route. The page might work with Google Translate.
