But do TOC's look at football times and schedule appropritely? As for Spurs, London is so well connected by bus, tube and train I wouldn't think it was particularly necessary to alter timetables much, maybe Wembley on big games?

Sorry but with Spurs you are way off the mark there, a lot of alterations are necessary to cope with the crowds, even more so now with the huge increase in capacity at the stadium. And that is before all the unit strengthening requiring a re-write of unit diagrams and modified drivers diagrams. Likewise for West Ham at Stratford. Close to 60,000 people need moving somehow.

The station at Old Trafford hasn't been used for some time now. Unfortunately it was inadequate to handle the crowds so was closed on health and safety grounds.
I was under the impression it was more due to the lack of paths through the Castlefield Corridor?

Noting that whilst the traditional times for kick-off are 3pm, and can be timetabled accordingly, games are shifted for TV with about 6 weeks notice.

Q - do the TOC's ever specifically organise a timetable (and length of trains) around a football club (with the exception of, say, Man United who have their own station and trains timetabled for it) and, if so, do they alter times when Saturday games are TV-shifted? How much notice would they require to do that?

Local to me Bolton Wanderer's staduim which used to regularly attract 20k+ is next door to a station but I have never seen any specific timetabling for games; just what appears to be the normal schedule you would expect for a Saturday.

I have been around Greater Manchester when Bolton have been at home a couple years ago where Northern ran additional Bolton - Horwich Parkway services (a pair of 142s) for the football crowd. Probably these days the lack of a crossover at Horwich Parkway (I think those specials have to go ECS all the way to Buckshaw Parkway to return towards Bolton) and with 319s replacing pretty much all the trains which call at Horwich.

Man Utd FC Halt hasn't been used since November 2017, so before the lack of paths via Castlefield came up. I will eat my chocolate hat if a service ever uses that platform again.

Hardly on the scale of Spurs, in any sense, but Bescot Stadium stadion has at least one additional train call that isn't otherwise scheduled to do so, shortly after the end of Saturday afternoon matches at Walsall FC nearby....

To my surprise, Tottenham Hale (Victoria Line) coped extremely well after the Spurs v Newcastle game yesterday. There were only minimal queues when I arrived, later than most and fearing the worst, 40 mins after the final whistle. It just shows what a 2-3 min frequency can do. Just a pity it isn't a bit nearer the ground.

That's what I advise anyone going from Central London to the Stadium and back again - Victoria Line to Seven Sisters or Tottenham Hale, and walk it. Don't expect to get a bus as they are diverted well away - the days when a steady stream of trolleybuses could be called upon to carry the crowds are long gone!

The White Hart Lane services weren't too great after yesterday's match, with a 2-hour gap in service between White Hart Lane and Enfield Town (18:55 then 20:55), with only 3 Cheshunt services running in this time...
