Hello all. I’m travelling from Sweden to Croatia next weekend, via Hamburg and Munich on a Sunday.

Is there any noticeable difference in the onboard catering offer on DB on Sunday?

I have to decide whether to make a quick change in Hamburg for the six hour journey to Munich or to linger for an hour to eat in the station before catching a later train.

Thanks!

None at all. The catering concept of offering extensive free catering in 1st Class on weekdays, and something entirely different at weekends is very much a UK thing(as indeed is the idea in general of a vastly reduced transport service on Sundays).

On ICE, or certain IC services the on board restaurant will offer this menu 7 days a week. In 1st class there is at seat service too, also 7 days a week.

There was a recent thread (can't find it in a hurry) which suggested there were sometimes problems with staff shortages at weekends.
Equipment failures/substitutions can happen any day, but on that route at least the substitute train has to be an ICE.
Catering on Hamburg station IIRC isnt too exciting - if you are coming via the ferry eating on board is a better bet IMO.
If you have a flexible ticket and an hour to spare you can always have plan B, but I would be minded to plan your leeway at Munich.

...which is driven by the rather different pricing levels between the two which tends not to be the case elsewhere.

True, it's probably better to say that the concept of having two separate products with different service and pricing levels - "Weekday First" and "Weekend First" is the UK speciality.

Yes, that's very much the case. It's a bit like the two Eurostar "first classes" - just you only ever have one of them at a time.
