Looking at the information available online, it would seem that this ticket is only valid between York and Selby on non-stop trains between the two stations (which only run 4 or 5 times a day) rather than the more frequent services that go via Sherburn-in-Elmet.

I suspect that in practice Northern guards are not going to care, but I think it ought to be valid at the additional stations (SIE, Church Fenton, Ulleskelf).

I also note that Grand Central and Hull Trains don't accept any of these rovers or rangers in the North of England, whereas threads on this forum from 5-10 years ago indicate that they used to be accepted at various times. Comments?

I would go by the diagram on the Northern website which only shows principal stations and so allows both routes.

The NRE website is not always reliable on rovers etc.

I know what should happen in theory, but in practice I wonder what would happen boarding at an unstaffed station and taking a Northern train. Would they argue should have Promise to Pay? These tickets can't be bought at TVM or online, but would they try to argue passenger should select something from the options available at TVM? So the question is if in practice - not in theory or as per our take on the rules - a passenger has to start at a staffed station to use this ticket

I think the guard would be able to sell it. Guards seem not to care about promise to pay, only if you are unlucky and encounter a poorly trained RPI you might have a problem (does Northern do roaming RPIs?)
