They are definitely all in use now. But you’re right about having to be specific about what you take in, just at Waterloo you’d have the platforms, the concourse, the shops and office range, a covered forecourt, bus and taxi ramps, etc etc...Largest on NR by number of platforms must be Waterloo (assuming all of them are in use).
However, if you are going by area, it would depend on how you delimit it - do you count just the area covered by buildings, platforms and adjacent tracks, or do you include the pointwork?
I don't think a narrow path, however long, would be much of a match for the huge overall area of some stations.Hopefully a Cambrian Line expert can confirm but I assume the access path to Dovey Junction station form the A487 is part of the station hence would bump it up somewhat in terms of station footprint.

I think we need to be serious here. I believe a station is its platforms, as far out as a train waits to enter the station, the buildings, the concourse , back offices, car parks, taxi ranks., bus lanes etc hence why I said St PancrasIf that counts then my suggestion is Middlewood, given that it's accessed via the Middlewood Way, which is over 10 miles long.
