Timetables often seem to be left at "Sprinter" level (lowest common denominator) when most trains could manage a faster schedule.
Manchester-Cardiff is mostly 90mph (with 110mph to Crewe), and normally has 90/100mph trains on it (158/175).
But when a 75mph 150 deputises (not uncommon) it somehow usually manages to keep time.
Perhaps when the operator no longer has any 75mph units (that could end up deputising for faster units) the timings will be revised. One can hope...

Cutting the time before the powered doors open when at a station could help reduce journey times. (I'm thinking of the electric powered multiple units from Euston through Bletchley to stations north etc.)
This. In spades. Dwell times are a killer now.

I believe the fastest timetabled is a Newark to Grantham at 114mph iirc
According to the Rail Performance Society in Summer 2019 all the top five fastest highest average timetabled start to stops were on HS1 and operated by Southeastern.
The top positions held by LNER for regional express services on the Yorkshire, Newcastle and Edinburgh Branch (of the Thameslink Main Line) were 9 and 10 for 2 evening Grantham to Stevenage services.

Southeastern hade tightened things up then; for a while the fastest domestic HS1 services only averaged up to 105mph

Its the evening peak down services to Ashford which don't stop at Ebbsfleet and average 111.4mph (27 mins) from Stratford. Theres nothing on the Yorkshire branch that averages over 110 mph now.

The 105mph was Ebbsfleet-Ashford iirc, the 114 on the ECML wasn't LNER or VTEC it was either Hull Trains or Grand Central I can't remember which

Do they routinely run at 140mph yet? I remember that when the services were first launched it was much discussed that normal service speed would be 125mph, with faster speeds only used for service recovery.

They have routinely run at 225km/h for years, I think the 200km/h thing was a myth?
