Barnetby (near Grimsby). Good flow of freight to and from Immingham Dock
PLUS all those gorgeous semaphores! Non-staffed station but adjacent pub, cafe and loos.

Between the parallel lines
As well as some daytime aggregates trains and so forth, East Croydon has a bit in the early morning, late evening and of course overnight (not that you'd want to be out in Croydon overnight!). The staff are very pleasant and it is manned (and very nearly served continuously by trains) 24/7. The cafés have OK opening hours and the loos are mostly acceptable.

On a local stopping service near you
For Birmingham, Water Orton is great for Freights, and Commuter trains. There's only about 5 trains a day that call there so it's pretty much secluded, and you don't have to worry about people getting in the way, if you're taking photos/videos

How about West Ealing Station is any good for freight trains passing frequently?
Yes - in fact, West Ealing is one of the featured Freightmaster
timetables for the London area as you can see all traffic heading
into/out of Acton yard from the West there...

What kinda stuff do you see at Stratford? I only know of container trains..
Other workings include:

- Plasmor concrete blocks from Heck to Ripple Lane

- flasks from Sizewell power station to Sellafield

- Sand from Ipswich/Marks Tey to Watford/Hayes

...but as you say, such trains are in the minority,
and often only run once or twice a week - most of
the 'interesting' freight workings in North London
run via the GOBLIN (Gospel Oak to Barking LINe)
these days.

Stratford is like Stafford - you have to like intermodal trains!
