Looking for when the nicest time would be to tour the tube, I’ve been on and of many times throughout the years but I have had a urge for a while to spend a day or evening traveling the network, doing as much as I can.

When would be the best time to do this do you think?

Weekdays during the daytime between the peaks is probably the best time, plus Monday-Wednesday evenings, and the first couple of hours on Sundays. These are generally the quietest times nowadays.

Weekends are pretty chaotic nowadays.

I think that's a reference to the maximum journey times... see https://tfl.gov.uk/fares-and-payments/oyster/using-oyster/maximum-journey-times

For example, if you're travelling around Zone 1, tapping in e.g. at Liverpool Street, travelling around and eventually tapping out at Waterloo, if you are underground for over 90 minutes on a weekday the system will recognise this as two separate journeys which you have not completed. It will appear on an online oyster account as Liverpool Street to [No touch out] and [No touch in] to Waterloo (or something similar). So if you spend three hours travelling around without getting out you will be charged the maximum fares.
