What about class 379s to Cambridge? Do they tend to swap around or work the same services regularly? I'm hoping to do a journey on that line soon-ish...

As with all services and classes of train, they follow certain diagrams day after day. Therefore any service booked for a Cl379 should be worked by a Cl379. The only time that may change is if there is some short-notice problem which may result in a train of another class deputising.
However, if you're hoping to catch a Cl379 you shouldn't need to wait too long for one.
