I'm just looking online and it seems that there are no more open dated return tickets available for stations in the north into Kings Cross. All the tickets I've found seem to be sold as two singles, which is not as advantageous as the previous arrangement.

Any way around it?

Doesn't it only apply from Leeds, Newcastle or Edinburgh? Buy instead from Burley Park, Manors or Haymarket respectively (or similar nearby stations).

Is doubling back between Haymarket and Edinburgh allowed? if not then buying a ticket from Haymarket would seem to restrict your routes, while buying one from Brunstane would not.

The OP was asking about travel on the East Coast Mainline, so I don't think it does. But I agree Brunstane is better for the extra versatility it gives you to travel via the West Coast Mainline.
