These trains sometimes have first class seating, but it seems you can’t book a first class ticket. Is first class on these services declassified?

Standard Class only services, so as with the Stirling, Dunblane, Alloa locals it's effectively declassified.

Never had a guard question sitting in First Class on any standard class only ScotRail service so I don't envisage you'd have any issues.

Enjoy it while it lasts, I think most/all of the four-car sets will go to the main via Falkirk High route once the platform extensions are completed making the via Grahamston workings 3-car Standard Class only units.
