if germany becomes a travel corridor destination ,what rules if any are there for going on to the station platforms for watching trains etc.i am thinking of doing a short trip to bremen or hamburg where the wearing of a facemask for such a short flight would be bearable

The problem with Germany is that a lot is devolved to the individual Bundeslaender (they have more power than Wales or Scotland invididually do), so the answer to that question is unlikely to be the same across the country. However, DB does not do ticket barriers (none of their stations have them) so there is less control than here, though their Police (and railway security pseudopolice) take rather fewer prisoners, as it were, than ours.

Never had an issue with photography Germany, you should be fine.

Not sure if you are allowed to loiter on the platform ends though these days...

Very big enthusiast community there - photography of trains wasn't even a massive issue in the old GDR (you'd need to be more careful with bridges) and steam enthusiasts regularly went across the Iron Curtain on organised to see the still running services there.

Great deal of variety too.

A clear yes you can as long as UK residence are allowed to enter without quarantine. Germany never had a full shut down. Just be sensible and listen to media on corona developments.

Dependent on local and regional restrictions, more or less but wear a mask and don't stand in the busy parts of the station. Stand down near the end of the platform where no-one goes.

As already said you have to wear a facemask at the stations and in the trains. If you want to make photos without wearing a mask all the time you can go on bridges over the track (in Hamburg Hbf for example south of the station). In Germany tracks are normally not fenced but it's not allowed for unauthorised persons to go into the track area. Please stay clear of the tracks.
In Germany most shops and restaurants are open. The main rule in the whole country is to keep distance (1.5 m) and to wear a facemask in a lot of situations (e.g. in shops, public transport, restaurants while not seating at the table, at the hairdresser). The detailed rules differ from one "Bundesland" to another and change every few weeks.
Some touristical areas like sea resorts on the North Sea or Baltic Sea have banned persons coming from regions with certain levels of Corona cases (typically more than 50 new cases per 100,000 inhabitants in seven days). At the moment persons from one "Landkreis" (administrative unit like a county in UK) are banned (Landkreis Gütersloh is hot spot because of one big slaughterhouse with a lot of Corona cases).

Sweden is the only "West" European country affected - the 50:100k threshold is 3-4 times higher than the current UK rate.

The official rules for hobby photography of the DB (https://www.deutschebahn.com/resour...onen-fuer-Hobbyfotografen-und-filmer-data.pdf) allow non-commercial photography on DB property legally accessible to the public without the need to ask for permission.
Apart from a ban of using artifictial light, tripods and similiar devices, the rules are pretty much common sense for railway photography (stay in public areas, don't endanger anyone, don't hinder operations or block evacuation routes and respect the privacy of other people).
It is also a very good idea to be friendly to our railway staff and to follow their instruction (the behaviour of some "enthusiasts" here has left a far too negatively skewed impression of the scene amongst some members of railway staff).

Follow the social distancing rules and properly wear a mask when required (in enclosed public spaces, aboard trains and also on platforms) and you shouldn't encounter any problems.
In fact, you are likely to do a better job than far too many people here if you do.
