I'm pretty sure I've seen a 7-car 331 formation in platform 3 at Oxford Road. It didn't fit, easily or otherwise. No doubt you did, but not accommodated in a platform at Oxford Rd.
Have a look on Google maps in satellite view. There's a four car Northern 156 rake in platform 4 at Oxford Rd. It can clearly be seen that another three cars the same wouldn't fit. A seven car 331 raft would be four metres longer than a seven car 156 rake.

If you check back up thread you'll see that I subsequently acknowledged that a 7-car 331 would definitely not fit in any of the platforms at Oxford Road, that is with all the passenger doors adjacent to the platform. Whether or not that would mean that passengers couldn't be allowed to use a door which was itself adjacent to the platform is another matter.Very true. I have witnessed it.

Are all Monday-Saturday Blackpool North to Airport and Hazel Grove services booked for double 331s now, even if the reality is almost the contrary?

I've mentioned it elsewhere, but it doesn't seem to have been reported on this thread: there is a booked 2x195/0 diagram on the Leeds - Chester circuit. 1E66 is the trip I usually spot, 1420 CTR-LDS, but I haven't traced out the rest of the diagram.
The first one from Hazel Grove (06.03, 2N60) to Blackpool is still booked one 331. Suspect that comes from Stockport CS at start of day.
All Blackpool North to Hazel Groves are double 331s.Are there any double 195s or 331s out now that services are beginning to ramp up?
