I would imagine a "made in xxx" inscription akin to that of most products one buys is good enough.
All medications are supposed to carry detail of at the very least who holds the product licence.

It would be pointless putting any logos other than the normal manufacturer logo on these vaccines anyway as they're not going to be something people can just buy are they?

Perhaps some logo based on the dreaming spires of Oxford. I think it would also be worth trumpeting how the innovation and technical expertise of the democratic western world has resulted in the development of such vaccines, at this juncture in history.
Nah, something a bit more subtle would be better.
‘Made in Britain’ written in Morse code, perhaps?
