Is a Spalding - Sleaford off-peak return valid via Peterborough and Grantham?
I suspect not, but would be helpful if it is.

Seems rather circuitous! Does NRE provide an itinerary that doesn't require multiple tickets?

Taking a look at the Routeing Guide, you get as far as realising both stations have the common routeing point Sleaford which means it’s a local journey, so only direct trains, the shortest route or any route within 3 miles of the shortest route is permitted.

Without actually taking a look at the National Rail Timetable for mileages, I’m going to hazard a guess that Spalding - Peterborough - Grantham - Sleaford is a bit more than 3 miles longer than Spalding - Sleaford.

No easements I’ve spotted either, so I don’t think so, no.

It's not but if it's any help Spalding to Grantham is valid via Peterborough or via Sleaford.

It might have been valid for the evenings when Spalding was only served from the Peterborough direction (last Sleaford - Spalding was something like 16;30) before that line timetable got improved giving an all day service?

Timetables have no impact on routes that can be taken other than in the case of direct trains.

Thanks guys, suspected that was the case. It is indeed less awkward than it used to be when using split tickets as there are now later trains Sleaford to Spalding.
