If Night Tube eventually reopens, I can see these services being added in the future:

DLR:
Stratford International/Bank - Canning Town - Beckton/Woolwich Arsenal.
No service to Lewisham via Bow Church or to Tower Gateway.

Overground:
Gospel Oak - Barking Riverside, Stratford - Clapham Junction via West Hampstead.
No service from Clapham to Surrey Quays.

District Line:
Ealing Broadway/Richmond to Dagenham East.

Metroplolitan Line:
Aldgate to Uxbridge

They can’t even run trains at weekends at the moment (nor bother to put information out about it), how are they likely to run overnight?

I doubt the District/Met would gain night tube services that far west, think its more likely met line services will be run Harrow - Aldgate or Uxbridge - Baker Street/Wembley Park (as the Jubilee already covers the section south of there to Baker st and you'd expect the Circle/HC to cover the section to Aldgate. Possible might even just be Harrow - Baker St initially.
Focusing on the service running more towards the northern destinations would be more useful rather than more into central London (where other lines already cover most of the mets ground), for those living in the suburbs.

Not even sure the District can run to Richmond as its technically National Rail territory. I would say its more likely a Wimbledon service would be run (or at least to Parsons Green) and in the East, probably no further than Barking

I don't think the OP meant immediately as these staff shortages wont be the case forever and most definitely wouldnt be the case by the time a night tube service restarts.

I can't see the Goblin running 24hrs at weekends. After 10pm it starts to get quiet

Can be fairly confident it won't be back anytime soon. Probably best make the initial routes successful (if ever) before trying to expand it!
