For busiest one-platform station, Kirkby (just over 2.9million entries and exits in 2019/20) might count - one platform face but trains terminate at opposite ends of it. Chafford Hundred (2.82 million) ran it a close second

The granularity of Oyster/contactless data makes it easy to infer the route (and hence NR/LU mode) on a significant percentage of journeys. I am sure that the data is incorporated into the ORR statistics in the same way that paper ticket sales are collated to calculate estimated figures for interchanges at each station.
It came as a considerable surprise to TfL not long ago when they found, by some analysis of where people were with their Android phones, what sort of routes people were actually taking in Central London compared to what the industry felt were the logical routes. I seem to recall a not inconsiderable number of Waterloo to Liverpool Street were changing at Green Park, and there were some even more out-of-the-way ones. If you connect inside a station it seems there is no easy way to determine what people actually do.

Someone must have a link to that study.
