Which platforms went? I imagine it's on the side where the Bury electrics went from, or indeed where the tram stop is now.
Further over towards what was the fish dock carpark.
Was a remodelling done at Victoria in anticipation of the tunnel project?
I believe there was a shaft and there’s a platform under the Arndale.

The former platform 3 at Holyhead has had its track lifted, I can't seem to find out when but it appears it might have still been in use into the 1980's. The former platform 4 outside the trainshed was renumbered to form the new platform 3.

Preston station, the old platforms 1,2 & 9. Though 2 and 9 are technically still there as the parcels platform and platform 7 is a goods loop.

Tyseley Warwick Road has lost its platform to the national network as apparently the ORR stopped allowing it to be used to start railtours from (it used to have a National Location Code) but is still there albeit covered partly by a new shed so can still be used on open days internaly.

Ascot has long term disused platforms on the south / down side which I understand were mainly there for race day traffic. Ascot also has what used to be a double sided platform which is now fenced off on one platform edge - this may or may not count here.

Twickenham has disused bay platforms on the north / up side, which again may have been there mainly for additional trains for major rugby matches.

Clapham Junction has a disused platform (previously platform 1) at the northern edge. The platform edge is still there, the track hasn't been there as long as I can remember. The current platform 1 / 2 arrangement was made by altering the old platform 2.

Windsor and Eton Central has shrunk considerably.

Link here to Windsor and Eton Central on the National Library of Scotland's digitised historic OS maps - this shows 1956 map - older maps are available but most areas have pre-1914 and post-1945 mapping available. Coverage is still being added to. (Thought I'd add a link for anyone who's not aware of it - you can move around and search by place name on that map.)

Ah yes, remember now. Think it was 1-3 that went during the remodelling.
Man Vic also lost P17 too, but I think was long before this.

Birkenhead Central - had a bay platform facing Rock Ferry on the old depot side. At some point the track was realigned slightly away from the platform face and and a fence erected. The track remains in use for stabling.

Walsall lost platform 4 during the 1970s remodelling of the Saddlers centre and platform 3 became a bay for terminating trains from Birmingham. At some point in probably the last decade new track was laid under Park St and platform 3 became a through route again enabling trains to call at the Down Fast platform in the UP direction.

Wigan NW went from 10 to 6 at re-building/electrification in 1972/3, and has recently gone from 6 to 5. Causes problems whenever there is disruption anywhere on the WCML, or from Liverpool or indeed from Manchester.

(Loosely) applying the 1990s criterion, a few Scottish examples:

Dumbarton Central lost one at resignalling in the 90s

Craigendoran lost the pier platforms and subsequently one in the 1980s singling - I think Helensburgh Central lost one then as well

Renton and Alexandria each lost one in the 70s singling

Helensburgh Upper lost one when the signal box closed

Newtonmore lost one when the signal box closed (1970s)

Dunfermline Lower/Town/City lost one on the Up side

Maybole lost one due to singling

West Kilbride and Fairlie each lost one due to singling

Didn't Rugby lose some during the West Coast route modernisation ? Bay platforms IIRC.

Grantham. P1 was removed (up side Bay), possibly late 60's, and the remaining platforms renumbered accordingly.
If we’re going this far back in time. Huntingdon, firstly with the loss of the GNGE joint line to St Ives, and latterly with the loss of fast line platforms as a result of electrification.

Crewe had 2 bay platforms and a through platform connected to plat 12 at some point, you can still see the overgrown platforms but the tracks have been lifted

Cardiff Central lost platforms 8 and 9, but since gained new platforms 0 and 8. It also lost bay platform 5 in the 1960s.

Battersea Park - platform 1 (Down South London Line) was closed in 2012 to allow the lengthening of platform 3. Most services to/from Wandsworth Road direction were diverted to/from Clapham Jn . A few "parlimentary" trains to/from Wandsworth Road direction reverse in platform 2.
nearby..
At Queens Road Battersea when was the up Windsor Fast line platform closed?

Mirfield platform 2 was dug up last year.
But will be reappearing, when they whole island is made accessible. Then P3 will go for the new fast line.

Castleford has recently regained the platform it lost. When was the platform (track) at York next to P8 removed?

Brighton's Platform 9, which was the nearest to the Signal Box (also removed). Normally used for Coastway East trains but could be accessed from the main line if needed.

Does Epsom Downs count? Went from nine platforms to one, albeit at a new location 400m or so away.

King's Norton and Northfield both went from 4 -> 2 platforms. Middle set are still there, just inaccessible
Interestingly the up camphill platform is also electrified but isn’t connected to anything else.

Acton Main Line, West Ealing and Hanwell have all lost platforms on the fast lines. The Up platforms are still there at Acton and Hanwell, albeit with the track alignment making an impractical gap for boarding, but the down platforms are no more.

Chippenham seems to originally have had at least three platforms, all of which exist but with no track through one.

Banbury appears to have lost/moved platforms around when relatively recently resignalled.
As far as I can tell, the north-facing bay between current platforms 1/2 was removed, and the south-facing bay behind current Plat 3 was removed.
However, the through track on the east side of the station was slewed over and a formerly disused platform face built out to make the now-through platform 4.
