Final update

I did end up sending a 3rd letter asking for an OoC settlement, and I included an offer of my own.

They responded with an OoC settlement offer of their own with was LOWER than my offer (not sure why they didn't take my offer but I'm not complaining).

Its been paid off on their website and it seems like the case is closed. Happy days. Any advice on how to double check that everything is settled?

You are welcome to start a new thread if you want help and advice - but the consensus here is that you should wait for a letter from the train company.

I think you should start a new thread with info on your case (see the guidance note) to get some good advice on what you should do. I doubt whichever train company is prosecuting you is likely to entertain a call out of the blue to discuss an apology. I am sure you will get some good advice if you set out the details in a new thread.

Hi, there was a phone number on the court summons but the number didn't work. So there's no way to contact them by phone that I'm aware of. I just sent letters. If you haven't received any correspondence yet, I believe people on this forum recommend you wait for them to contact you first.

Wait until they contact you. They might decide to drop the matter and you may never hear anything. On the other hand, if your case is in a pile waiting to be dealt with it won't mean anything to them if they get a letter/email from you before it's in the system, if you see what I mean.
