Using two off peak returns for one journey

Would it be ok to buy two off peak return tickets for one journey?

As in...

Seaham - Hull using
Seaham - York off peak return
York - Hull off peak return

then use the return portions the same way?

As long as the train calls at York then yes.

This is known as splitting tickets and is allowed by the conditions of carriage

nb: I have assumed your off-peak tickets are valid for the period you wish to use them for

You might find it a little cheaper to split your tickets at Northallerton rather than York - provided your train stops there, of course.
