From Staines station an off peak day return ticket to Brighton costs £24.20, a month off peak return ticket costs £30.30. There is no cheaper advance tickets available whereas from some further stations, for example Bath Spa to Brighton each journey could be as £13 or £15. Why?

By the way, why are day return tickets often only 10p more expensive than their counterpart single tickets? Is it to encourage passengers to return the same day?

There are very many journeys in the country with no advance tickets, particularly shorter journeys, but you can just get one from Clapham junction.

Because that is the changing point for Brighton and the place where you change from SWT to Southern.

Yes Clapham Junction is a good place to have as an originating station on Advance tickets, I've seen many people with £2 or thereabouts Advance tickets to Brighton, so the cheapest for you would be a single/return to Clapham Junction together with an Advance ticket from CLJ to Brighton. Even cheaper if you can manage to start the journey at Feltham using Oyster to Clapham Junction :)

Becuase if they were half the price, the TOCs would make less money?

A day return is special ticket. Would you rather pay twice as much as single for a return?

Southern offer Advance fares from Twickenham - Brighton and are the same price as a journey from Clapham Jn - Brighton.
