There isn't room to run more services over the corridor, or stop more of the services which don't currently stop. A look at the timetable shows how in each half hour, there are five trains through the corridor (Stansted, Hertford North, Stansted, Cambridge, Bishops Stortford) with a mix of stopping patterns, and some uplift in service in the peaks.

Some of the issues are in this post, which also notes the need to accommodate freight, and the issues with level crossings.

Needs more tracks, and then those trains need somewhere to go once they reach Stratford. Hence the plan to hold off adding those tracks until there's a handy new tunnel from south of Tottenham Hale towards central London to take the trains.

I suspect the original poster will have a very long wait for a more frequent service then.

Why is there room to stop more trains at Enfield Lock and Waltham Cross?

There is space in the timetable to call some trains at acoulel of extra statikns between Tottenham Hale and Cheshunt. Enfield Lock and Waltham Cross have the highest demand, so they get the calls.
