As already stated, they do but beware of the "window police", the Germans appear to be less tolerant of draughts than most - if you hear the words "fenster schliessen" that means close the window :lol:

This is very true, they seem to prefer being on a train that's too hot rather than it being draughty!

This is absolutely not restricted to Germany. Certainly applies to France and Switzerland.

In the old days French passengers were very well known for their annoyance at open windows. Throughout my inter railing era I missed hundreds of miles of scenery on French lines due to falling asleep because normal passengers kept the windows shut inducing drowsiness.
