I think all XC services return to Edinburh ECS, as you state the HST needs to go to either Dundee or start from Edinburgh the following morning. I think the Dundee HST leaves at about 530 via the suburban line.

Indeed. XC801 operates the 0600 Leeds - Plymouth and then the 1221 Plymouth - Glasgow Central, before heading ECS back to Edinburgh Craigentinny, followed by a very early ECS up to Dundee to operate XC802 the following day. It's scheduled arrival into GLC is heavily padded: timetable says Edinburgh 2112, Haymarket 2117, Motherwell 2204 and GLC 2235! We were > 30 minutes down leaving Waverley a few weeks ago and I was looking forward to a delay/repay claim. That quickly evaporated :D

The 125 Group (http://www.125group.org.uk/diagrams-AXC.pdf) currently have the following as the complete weekday XC HST diagrams...

XC801 1V19 0600 LDS-PLY, 1S51 1221 PLY-GLC, 5S51 22+40 GLC-EC.
XC802 5V39 04+41 EC-DEE, 1V39 0632 DEE-PLY, 1E73 1721 PLY-LDS.
XC803 5V23 05+14 NL-YRK, 1V23 0632 YRK-PLY, 1S55 1321 PLY-EDB.
XC804 1V31 0608 EDB-PLY, 1E63 1521 PLY-LDS.

Those AXC diagrams tie in with what I have in front of me, although there is also:

Fridays Only

XC805 1V64 1307 EDB > PLY

Obviously with ECS to LA afterwards. It's operated by an HST on Fridays only to get one in place for 2N00 to NQY the following day.

EDIT:

Thanks Failed Unit for the AXC gen there, would have been so awesome if the 1221 PLY > GLC continued via the Tyne Valley to Glasgow. T'was extremely unlikely though!

No problem, I don't think they have enough units to get to Edinburgh. (don't even think the voyagers are cleared, then you have route knowledge issues for the HST drivers etc). When the Chesterfield diversion was on the Newcastle services had to be curtailed at York to save sets.

Which route do the HSTs take in and out of Edinburgh? (Do they go to the east or west?)

Carstairs, Slateford and then Haymarket (west?). Some service even stop at Haymarket twice if they are going further north. Looking at timetable at 852 you have a Virgin to Haymarket and Carlisle followed by a NXEC to Carlisle and Newcastle at 855. The HST will get a few signal checks!
