Hello,

I was stopped by a southeastern ticket officer on the 3rd of June for having an invalid ticket at London Bridge

On the 2nd of August I received a letter saying the matter has been provisionally authorised for prosecution. I replied promptly to this sending my letter on the 7th of August explaining that I am sincerely sorry and would like to settle out of court.

I still have not heard back and I am worried if they have already proceeded beyond an out of court settlement - How long do Southeastern tend to take to reply?

I would suspect not that long. Try sending it again with a short covering note asking if they had received your original reply. Include all your contact details phone postal and email mail.
