Does anyone know of a handy way to track the movements of a particular train? I fancy going to look at merseyrail 507001 and wondered if there’s a way to know where that particular train is at a particular time.

There may be other services available but for the TOCs that take part in RTT's Know Your Train feature, one can use the quick search feature to find a particular unit (for example 150001 currently brings up a service to Lincoln).
Unfortunately in your case I don't think Merseyrail participate but there may be other sources.
