I'm struggling to find a heritage railway open on a Monday. The vast bulk of them seem to be closed on Mondays. Anyone know of any that are a) definitely open and b) worth a trip?

What part of the country are you looking at? As far as l am aware Bluebell Railway, West Somerset Railway and North Yorks Moor Raikways are running on Mondays in July. Presume some others are operating as well. No idea of what fits your criteria of "worth a trip".
North Yorks Moors runs every day early April to end of October, and is definitely worth visiting. Includes trains running through to Whitby and back.
