I’ll be on the Acela in a couple of weeks, so glad I read this thread. What’s the catering like?
If you go First Class the catering is very good from what I have heard, although I have not experienced it myself.

In "business class" which is what Amtrak calls Acela standard class, you have access to the Acela Cafe which is decent IMHO.

I should note in Business Class there is no at-seat service, you have to go to the cafe and either consume it there or take it back to your seat.

First Class catering is very good, and they are very good at bringing a new can of beer when they see your previous one is empty, despite all the drink being included in the fare.

A London Underground driver called Dale Charman who I follow on YouTube posted an 11-minute video review of a trip last year in First Class from Washington to New York - there's a freeze-frame of the menu at 7:00, then at 7:25 he's served with a meal of jerk chicken:
