Does anyone know if single ticket on NJ Transit permits a break of journey. https://www.njtransit.com/tickets/train-tickets describes a single ticket as
No - once the ticket is scanned once the QR code on it becomes marked as invalid. The only exception is for a journey originating/terminating/requiring a change at Secaucus Junction, as that station has automatic ticket barriers.

Thanks. One of the journeys I want to make is Princeton Junction to Bayhead changing at Rahway. I presume I could take an earlier train from Princeton Junction than the one recommended and have a bit longer at Rahway?

Correct. In that case you could break your journey - the ticket will still be valid if it is a multi-leg journey after the first scan. I understood the question as e.g. breaking a Princeton Junction-New York Penn journey at Metropark.
