Look at the public fare for the train you want on voyages-sncf.com, then you pay just over 25% of that assuming you have a GB issued FIP card. It's just over 25% because the supplements charged for TGVs, if you take those trains, are not covered by the FIP discount. Buy the ticket in France, but you may have to prompt them to over a 75% discount as most FIP cards (issued by other countries) only offer a 50% discount.

So would the discount be off the cheapest (and least flexible fare) or from the most expensive (and most flexible ticket)?

It's off the high priced ticket, but one step below TGV Pro if that's offered on this route. Looks like it would be c.£16-17 one way in 2nd class.

Have looked at it on voyages-sncf.fr website. Looks like it would be about EUR 13 - 19. The normal system is that TGVs are classified as either peak or off peak (this is not necessarily related to departure times, unlike the UK). There is a higher FIP fare for the peak trains. You might be able to save a couple of EUR by taking a local train to Lille (a TER) and only using the TGV from there, but the saving would be this small!
