Class 375/6 And /7 - Similarities/Differences

Other than the pantograph, are there any other differences between the subclasses, or are the /7s literally just /6s without pantographs?

Do you mean where the seats face inwards? In that case, no.

Probably because they could be retrofitted with pantographs if they changed operator

Because the 375 is actually a dual-voltage unit by design.
