It was decided that time immemorial was to be before the accession of Richard I, who acceded on the death of Henry II on that date.I think this was the day degreed to be the last day one could use 'time immemorial' - legally one couldn't claim anything actually 'happened' before 5th July 1189, due to the many instances of doubt and dubious storytelling that went on. Also, I think that the day was extended to 6th July as, linked with @Calthrop answer, Richard I (Lion Heart) was proclaimed king after his father died.
