I think they are aware of the trade-off they're making (it's certainly not one I'd be making, but YMMV). But the fact that the flexible Super Off-Peak Return won't have been shown as available on itineraries involving GX services certainly wouldn't have helped them come to an informed decision.
What is the problem in validating GX services against this super off-peak ticket? I can't see any restrictions prohibiting the use of GX here.

There are (unpublished) restrictions in the electronic data used by journey planners preventing itineraries being offered on GX services.

BR Fares don't show anything related to this in the unpublished restrictions section. Isn't it directly dumping the data out from the restriction code?

How exactly can unpublished restrictions be enforceable?
They aren't, from a passenger perspective. But they limit the itineraries that booking engines offer and accordingly result in overcharging.

BR Fares only shows the electronic (i.e. unpublished) time restrictions, associated with restriction codes like B3.

It doesn't show the unpublished restrictions associated with route or ticket type codes, which is the issue here. You would have to download and interpret the RDG fares data to do that.
