Do they still do Day Save? If so might that cheaper? (Assuming for a return journey on a different day it won't be)

EDIT: Have just checked and DaySave is now £26!!?

There is engineering works between Victoria and East Croydon on 1st June, which will reduce the number of services running between the two stations on the day (with services to Eastbourne and Littlehampton starting from London Bridge instead of Victoria). It's possible that Southern may leave it to almost the last minute to release advances for 1st June because of this.
Thanks for the explanation. I don’t mind waiting but have friends who want to get it booked.

Are we generally safe from the tickets that are on sale going up in price further? I assume its a fixed rate?

Yep, the tickets you're seeing now are what you'd get at the station on the day. They're a fixed rate and not linked to any particular service, so I'd recommend not buying in advance personally since there's no advantage to doing so.

It looks a better option for you would be to buy a DaySave, these give unlimited travel on any Southern train for £26. You can buy it now, but the only requirement is to purchase at least 3 days in advance unlike normal tickets https://www.southernrailway.com/tickets/daysave
