When I went on the first, I ended up getting 8 carriage units all the time.Nothing is set in stone.
Anything can happen and any serviceable unit could be out in service. But the weekends generally see a slightly reduced service compared to a weekday. And remember, as mentioned upthread, there will be a lot less units running over Easter due to engineering works. Don't be surprised if some services are only 4-car - i.e. a sole unit

I seem to be seeing 321434 a lot, even though I don't trainspot, and most of the non PRM units you found all belong to the Ex Silverlink set (421-437) 321434, 321421, 321429.I went trainspotting at Colchester North today and saw:

All the red door ones are either off lease, scrapped or warm stored. According to Uk rail log, 361, 440, 441, 443 are the only ones active, but I haven't seen any of them for a while. 361 I saw sometime in February. There are also quite a lot of pink door ones and the NXEA livery ones. 427 is out today but I have no chance of riding it.That’s the opposite for me! If they were blue then it could be 433 or 333 if it was red then it would be 443

I try to avoid the Renatus. The very loud door release chime cuts through me. Also the loud hustle alarms go off at every door, even when they are closed. The 315s don't do this so clearly it's possible on older trains to have the hustle alarm sound only when the doors are open.An enthusiast's view rather than a passenger's one. I avoid the renatus ones too. The door alarms are irritating and unnecessarily loud. The non PRM 321s alarms are perfect, not too loud and unique and a couple of them are strange and funny not gonna lieI try to avoid the Renatus. The very loud door release chime cuts through me. I've never understood the need for these alarms to be so loud. Presumably they are aimed mainly at blind or partially sighted people, whose hearing is likely to be better than average. Plenty of other trains have much more bearable tones for door release/closure.
