Are there any places left where HSTs run regular services? I am interested in knowing.

And that is basically it. On 2 consecutive days in November I did Newport - Taunton (via Weston-super-Mare) and then Exeter - Tamworth (avoiding Weston-super-Mare) which was about as much as I could manage for long distance journeys, with the excuse of going to Okehampton!Roughly
GWR - Cardiff to Taunton / Plymouth / Penzance
Cross Country - Edinburgh / Leeds to Plymouth (very limited)
Scotrail - Edinburgh / Glasgow to Aberdeen / Inverness
And they now only reach 125mph between Tamworth and Derby, where I haven’t been. I have to say there is a lot more enjoyment to be had out of the remaining HSTs in whatever limited amount of time they have left than there is in the many more Voyagers however long they last!Full length HSTs - just Cross country, mainly on the NE-SW route

Do you mean that's the only section of 125mph running by HSTs you haven't been on or the last section HSTs do run at 125mph on? Because they still do 125 when they venture north of York on the ECML, as two sets doing Plymouth-Edinburgh/Edinburgh-Plymouth did on Monday.And they now only reach 125mph between Tamworth and Derby, where I haven’t been.
The most likely trains are 1V44 Leeds-Plymouth which normally forms 1S51 Plymouth-Glasgow and 1V50 Edinburgh-Plymouth which normally forms 1E63 Plymouth-Leeds on Mondays to Thursdays. But this tends to depends on whether DfT allow XC to use the HSTs during the week. The third diagram which has worked a few weeks recently is 1M49 Plymouth-Birmingham which goes "round the houses" empty then forms 1V61 Birmingham-Plymouth.Is there a place/website where I can find out what time and what place they will be running? Always worth remembering there is one HST you cant travel onAt this rate it will be the last one in service.
